Pan dictates where the sounds come from, left speaker channel, right speaker channel, or somewhere in between. Basically the sound is produced louder in one speaker or the other, or equally to give the impression of space. Volume control is how loud a sound is. Louder makes it sound closer, softer makes it sound further away. Pan and volume control are very important to making sure each sound you use in a song has it's own space and isn't getting messed up by, or messing up, any other sounds.
